You have the option to fill out a cut sheet. This tells the butcher exactly how you’d like your pork processed. Want thicker pork chops? Extra sausage? More bacon? This is your chance to make it your own.

If you don’t fill out the cut sheet, your order will be processed using our Standard Cut, which for a whole pig typically includes:

1 Slab of Bacon (about 7 packages per slab, 1 lb each)
1 Ham (cut into thirds – 3 total ham portions)
2 Shoulder Roasts (2–3 lbs each)
Spare Ribs (half portion)
Pork Chops (bone-in, ½ inch thick, 4 per package)
Pork Steaks (¾ inch thick, 2 per package)
2 Smoked Hocks
